As August is winding down and September is right around the corner, it's almost time for pumpkin, right?! Even if this is a bit early, it's actually a really nice transition smoothie for fall. And to be fair, I am almostttt ready for fall recipes and food. As much as I love summer and all the fresh produce, I really like fall cooking. Crockpot recipes, soups, stews and hearty dishes are some of the ways to my heart. And this vegan pumpkin smoothie with salted almond date caramel sauce is going to make this transition a lot easier.

If you watch any of my stories on Instagram when I make a smoothie, you know that I like them thick. I find a thick smoothie so much creamier and filling. That means using lots of frozen ingredients and less liquid. With this vegan pumpkin smoothie, I added a fun twist with the salted almond caramel sauce. It makes it more of a treat, and I like to enjoy this as a snack personally.

Summer, Where'd You Go?!

This weekend is one of the last weekends before summer really winds down and I plan on taking full advantage. I can feel the temps getting a bit cooler already and the sun has definitely been going down earlier. But, rather than be upset about it, I am embracing it. A new season brings with it a new energy and renewed sense of focus. This summer has been full of fun and sun. I spent nearly every weekend with girlfriends soaking in the sun or nearby my pool and it's been the best. I have actually never been this tanned in my whole life, and my freckles are out on full display. But, it has also meant less time indoors and working. I don't regret it one bit, but I am ready to see a new season and get some of my focus back.

Working for myself definitely has its perks, but it's also really hard. Sometimes, I lose focus or steam. Sometimes, I freak out over finances and not having that steady income and job. Entrepreneurship is not for everyone and sometimes, I feel like I am running in circles still. As far as I've come in my business over the years, there is still so much more I want to do. And I know I will do it, just not all at once like many people will have you believe. That freedom life is great, but it's also stressful, time consuming and hard. It isn't for everyone and it kind of irritates me when people make it look so easy. You know the whole "get rich quick" stuff that is often marketed and sold in the business coaching world. Everything takes work, make no mistake about it.

Vegan Pumpkin Smoothie: The Perfect Snack or Breakfast

One thing that truly doesn't take a lot of work though is this vegan pumpkin smoothie. If you have the ingredients on hand, you can whip this up in no time. Which is why I love smoothies for a quick breakfast or snack. If you make the salted almond date caramel sauce ahead of time, this will be ready even quicker.

For the Smoothie

For the Salted Almond Date Caramel Sauce

Instructions


  1. Make the salted almond date caramel sauce first by placing the pitted dates in just boiled water to soften them for about 10 minutes. Then remove from water and add to a blender along with the almond butter, water, vanilla, lemon, salt and cinnamon. Blend on high until the mixture is completely smooth. Set aside.
  2. Make the smoothie by combining all of the smoothie ingredients in a blender and blend until smooth and creamy.
  3. Add a few dollops of the salted almond date caramel sauce to a glass both at the rim of the glass and a few other spots. Then pour in your smoothie. Garnish with pumpkin seeds and a sprinkle of cinnamon. Serve and enjoy right away!

Notes

Store leftover almond date caramel sauce in the fridge for up to one week.
