I've been making these roasted carrots for a long time and I don't plan on stopping. They're sweet, sticky and savory. Every time I make them for someone, they love them just as much as I do. They sort of taste like candy. Not like candy, candy, but you know, delicious just the same. Even though carrots are already naturally sweet, I still like adding a drizzle of maple syrup to them. These maple roasted carrots have a savory miso dressing that helps to balance the flavours.
Carrots are widely known for their health benefits, specifically the antioxidant beta carotene. Beta carotene is the red-orange pigment found in plants and fruits, and the name beta carotene comes from the Greek “beta” and Latin “carota” (carrot). Beta carotene converts to vitamin A in the body. Carrots have the highest source of vitamin A along with sweet potatoes.
I truly prefer savory over sweet, so even though I love adding some maple syrup to these maple roasted carrots, I also like adding in some onion too. The onion wedges add a delicious taste, texture (it gets SO jammy!) and savory taste.
To make these easy roasted maple carrots you'll need a few simple ingredients.
To provide some sweetness to the carrots, orange is the answer. You'll need one medium sized orange and don't forget the zest! You'll slice up that orange and add to the pan. This will get nice and jammy after roasting.
To provide a little more balance, you need some sour and that comes from lemons. Similar to the orange, you'll need the juice from half a large lemon to lightly pickle the red onion and then slice up the rest to add to the pan.
The star of the whole show! I used one large bunch of carrots and then cut them in half. I like using rainbow carrots because they're just so pretty once you cut into them, but any type of carrot will do. If you can, try and find some with the tops still on because that means they're fresher. Halve or quarter them depending on their size.
A nice drizzle of maple syrup brings out the sweetness just a bit more. Plus it helps them to get a little more sticky too.
To get these carrots roasted, you'll use a good splash of extra virgin olive oil. My go-to brand for EVOO is this brand! I also like this one as well.
The quick dressing that goes on top of the maple roasted carrots contains miso. Miso is a delicious fermented paste that provides a salty and savory flavour. You'll need about 3 tbsp to make the dressing.
This is the miso paste I buy and use.
Along with the miso, you'll need a little splash of tamari to make the dressing. If you don't have tamari, you can use soy sauce or even coconut aminos.
Sesame oil is the perfect oil to add to the miso dressing because it provides such a delicious flavour. A little goes a long way with sesame oil. For this dressing, you want to use toasted sesame oil.
Making these maple roasted carrots is really super easy. All you need are the ingredients listed above and one pan.
First things first, add the red onion wedges into a small bowl along with the lemon juice, salt and pepper. Then let that sit for about 5 to 10 minutes to lightly pickle them.
Next, cut the carrots in half or quarters if they're larger. Add them to the pan and top with the red onion, the sliced orange, juice and zest, the sliced lemon, maple syrup and extra virgin olive oil.
Go ahead and place that in the oven to roast for about 25 minutes. During the last couple of minutes, you can add some sesame seeds to the carrots to toast.
If you want to roast the lemon, orange slices and red onion longer you can leave it in the oven for about 10 to 15 minutes longer. This will ensure the carrots don't get overcooked and the red onion, lemon and orange get all nice and jammy.
While the carrots are in the oven roasting, you can stir together the miso dressing in a small jar or bowl.
Once the carrots are out of the oven, let them cool for a few minutes and then plate them. Drizzle the miso dressing all over.
I love how easy these maple roasted carrots are to make. They're pretty hands-off and you only need one pan to make them. They truly taste like candy!
You can store any leftover carrots in a sealed container in the fridge without the miso dressing if possible.
Any leftover miso dressing will last in the fridge for a few weeks and makes a delicious dressing for so many veggie dishes, or buddha bowls.
These roasted carrots make a great addition to any entree, like this roasted whole chicken in a skillet. Or you can make it a full meal with the addition of rice (I like using black rice) and some roasted chickpeas or lentils.
