We all know the best part of baking cookies, right? Eating the raw dough of course. I don’t know about you, but I love sneaking bites of it while I’m making a fresh batch. So, why not just make (and eat) straight cookie dough instead?! Well, now you can, because this healthy cookie dough is the EASIEST no bake edible cookie dough recipe there is. With just eight ingredients (including salt), you can easily whip these up and enjoy a bite whenever you want, no bakign required.
Ingredients You’ll Need
This easy vegan cookie dough recipe uses only 8 ingredients! Bonus – you probably have all of these ingredients already in your pantry.
Be sure to source a gluten free oat flour for this recipe if you need to be sure that there is no gluten. You can of course make your own flour from gluten free oats, just be sure to grind it fairly fine.

I like using peanut butter for these healthy cookie dough bites. Ideally, you want to look for one that is made with just peanuts (and maybe salt).

I use maple syrup to sweeten this healthy cookie dough and love the taste this provides.
A splash of vanilla brings out the natural cookie dough flavour more.
You’ll need some coconut oil to keep the balls held together. I tried to do it without the coconut oil at first and found it was too crumbly.

A small pinch of both adds a little something extra to the vegan cookie dough balls. Feel free to use ground or fresh.
A pinch of kosher salt helps to round out the sweetness and actually enhances it as well.
Adding in some chocolate chips is always a good idea!

How to Make This No-Bake Vegan Cookie Dough
Whipping up a batch of these healthy cookie dough bites couldn’t be easier. No need to pre-heat your oven, simply get one medium sized bowl and add in your ingredients. Mix it up with a spoon or your hands.
Then add in your chocolate chips.
Now, mix it all up with a spoon, taste test some to see if it needs anything else. Also, this is raw cookie dough after all, so don’t be shy!
Use a small cookie scoop to form them into balls, or simply use your hands to roll them up.
Storing Your Healthy Cookie Dough
Keep leftover cookie dough bites in your fridge in a sealed container. They will keep in there for a few weeks, or move them to the freezer in a sealed container. When you want one, let it sit out for a bit to soften and then enjoy!
No oat flour: use almond flour
No peanut butter: use another type of nut or seed butter. The best options are almond, cashew or Sun Butter (sunflower seed butter).
Maple syrup: feel free to use another type of sweetener such as honey or coconut sugar.
Coconut oil: you will need some sort of moisture added to these cookie dough bites, so I suggest coconut oil, avocado oil or butter. You won’t taste the coconut oil much at all in the finished product.
Can I Bake This Cookie Dough?
I’m sure you can, but I don’t know how they would turn out. Plus this recipe is intended to be eaten raw.

Craving cookie dough? Try whipping up a batch of this healthy cookie dough and enjoy it by the spoonful!
In a medium sized bowl, add the oat flour, peanut butter, maple syrup, coconut oil, vanilla, salt, nutmeg and cinnamon. Mix well using a spoon or your hands.
Fold in the chocolate chips and mix again.
Using a small cookie scoop or your hands, scoop the cookie dough into balls and place in a container with a lid. Place in the fridge until ready to enjoy!
Bake the flour first: if you’re worried about eating raw flour, simply spread the flour on a baking sheet and bake at 325ºF for 7 to 8 minutes. Then proceed with the recipe as is.
