- Tomatillos
- Serrano pepper (or use jalapeño)
- White onion
- Cilantro
- Limes
- chorizo sausage (or other type of sausage)

How to Make Taquitos in the Air Fryer
These air fryer breakfast taquitos couldn’t be easier to make. And if you don’t have an air fryer, you can easily make this in the oven as well. See instructions for that below.
The first thing you’ll want to do is make the salsa verde.
Turn your oven to broil. Toss the tomatillos, onion and serrano pepper on the baking tray. Broil for about 10 minutes, flipping halfway through, until nice and charred.
Let the tomatillos cool slightly and then transfer everything to a food processor. I added a little lime zest to the salsa verde.

Pulse the ingredients until everything is nicely chopped and fairly smooth.

Heat a large skillet over medium heat. Once hot, add the sausage and crumble with the back of a wooden spoon or spatula. Cook until crispy and cooked through, about eight to ten minutes. Remove with a slotted spoon and set aside on a plate lined with paper towel. Discard some of the fat remaining.

In a large bowl, whisk the eggs with a splash of milk and salt and pepper.
In the same skillet, pour in the eggs and cook over medium-low heat, until cooked through. Remove and set aside with the sausage.
To the same skillet, add the spinach and cook until just wilted, about two minutes. Remove and set aside.

Assemble the taquitos by placing one tortilla on a flat surface. Place some of the eggs first, followed by the spinach, salsa verde and sausage. Top with cheese and then roll them up tightly, sealing with a toothpick.

Place the taquitos seam side down in the air fryer and spray the tops with avocado oil spray and bake for five to six minutes. Flip and bake for another five to six minutes, until lightly browned and crispy.

Serve with cubed avocado, cilantro, sour cream or greek yogurt and extra salsa verde if desired.

Tips
- Prep the salsa verde ahead of time to make things extra easy and efficient in the kitchen.
- Seal the tortillas with a little bit of yogurt when rolling them up or simply use a toothpick to keep them rolled up.
- Don’t overstuff the tortillas, as the filling will fall out and make a mess.
- Use avocado oil spray on the taquitos to get them extra crispy.
Substitutions
- Gluten-free: use gluten-free tortillas, cut them into smaller circles for taquitos if needed.
- No dairy: use a dairy-free shredded cheese, dairy-free milk/yogurt.
- No pork: use another type of sausage, anything will work here (turkey, chicken, veggie).
- More fibre: add some black beans instead of sausage, or use half sausage, half beans.
- No salsa verde: you can omit the salsa verde and use your favourite salsa instead.

How to Cook Frozen Taquitos in the Air Fryer
- If freezing these, it’s best to freeze them without the salsa verde inside as it could turn into a funny texture.
- Prep the taquitos up until they’re rolled and sealed with a toothpick.
- Place the frozen taquitos in a freezer safe plastic bag and store in the freezer for up to three months.
- When ready to cook, preheat the air fryer to 375℉.
- Place the taquitos in the air fryer and bake for about 12 minutes, flipping halfway through. You can increase the temperature at the end to get them more browned and crispy.
How to Make Taquitos in the Oven
If you don’t have an air fryer, you can prepare these breakfast taquitos in the same way and then bake them in the oven at 425℉ in a baking dish for about 15 to 20 minutes. I would recommend spraying the taquitos with avocado spray as well to get them crispy.
Which Air Fryer Do I Use & Recommend
I’ve tried three different air fryers over the years and here are my top two picks.
Cosori Air Fryer
The first air fryer I use and recommend is the Cosori. Here’s what I love about it:

- Responsive: the digital touch is very responsive and easy to use.

- Cooks quickly: I love how powerful this air fryer is and appreciate how quickly it can cook food.
There’s not much I dislike about this air fryer to be honest. It performs amazingly well!

And the second, is the Wonder Oven from Our Place. Here’s what I love about it.

Here’s what I don’t like about Our Place Wonder Oven:
Less powerful: I find the “air-fry” mode slightly less powerful than other standalone air fryers.
Hard to keep clean: the door and sheet tray have gotten quite dirty over the years and it’s hard to maintain it, even after cleaning after every use.
Stopped turning off: the older version I have has also stopped turning off, so I have to unplug it all the time. The newer version could be updated and this isn’t an issue anymore, I’m not sure?

Description
These meal-prep friendly air fryer breakfast taquitos are easy to make, customizable and filled with hearty and delicious ingredients.
Ingredients
For the salsa verde:
- 1 lb tomatillos, (about 6) husked and rinsed
- 1 serrano pepper, stem removed
- 1/2 white onion, roughly chopped (large)
- 1 clove garlic minced (optional)
- 1/2 cup cilantro, packed
- 1 tbsp lime juice
- 1/4 tsp kosher salt
For the taquitos:
- 12 oz chorizo sausage (or other type of sausage), casing removed
- 8 eggs
- 1–2 tbsps milk
- salt and pepper, to taste
- 5 cups baby spinach
- 15 small tortillas
- 1 1/2 cups shredded cheddar cheese
- Avocado oil spray
For topping (optional):
- Avocado, cubed
- Cilantro
- Sour cream or Greek yogurt mixed with lime juice
- extra salsa verde
Instructions
- Preheat the oven to broil and move the oven rack to the highest position. Place the husked tomatillo, serrano and onion on a baking sheet. Broil for about five minutes, then remove, flip, and broil for an additional five minutes, until charred. Let cool slightly.
- In a food processor, add the tomatillos, serrano pepper, onion along with the remaining salsa verde ingredients. Pulse on high until the mixture is mostly smooth and no large chunks of tomatillo or onion remain. The sauce will thicken in the fridge. You can prepare this ahead of time.
- Heat a large skillet over medium heat. Once hot, add the sausage and crumble with the back of a wooden spoon or spatula. Cook until crispy and cooked through, about eight to ten minutes. Remove with a slotted spoon and set aside on a plate lined with paper towel. Discard most of the fat remaining.
- In a large bowl, whisk the eggs with a splash of milk and salt and pepper.
- In the same skillet, pour in the eggs and cook over medium-low heat, until cooked through, about four minutes. Remove and set aside with the sausage.
- To the same skillet, add the spinach and cook until just wilted, about two minutes. Remove and set aside.
- Preheat the air fryer to 400℉.
- Assemble the taquitos by placing one tortilla on a flat surface. Place some of the eggs first, followed by the spinach, salsa verde and sausage. Top with cheese and then roll them up tightly, sealing with a toothpick.
- Place the taquitos in the air fryer and spray the tops with avocado oil spray and bake for five to six minutes. Flip and bake for another five to six minutes, until lightly browned and crispy.
- Serve with cubed avocado, cilantro, sour cream or greek yogurt and extra salsa verde if desired.
Notes
To freeze: prep the taquitos as indicated until step 8. Then store rolled up uncooked taquitos in a freezer safe plastic bag. When ready to eat, cook from frozen in the air fryer or oven, until crispy on the outside and warm throughout. Don’t use salsa verde in the taquitos if freezing.
