Do you remember the first time you tried a new ingredient and your tastebuds literally sung out in praise? Well that is pretty much what happened to me when I tried miso paste for the first time, and to be fair every time since then. Miso is a strong savoury and salty flavour. I have always been drawn to and loved Japanese and Chinese dishes, and I would say they are both one of my favourite types of cuisines. More often than anything, I am adding things like tamari, miso and nori or other sea veggies to things. So when I had some cauliflower to use up, I knew I wanted to make it into some miso roasted cauliflower. It did not disappoint!
And It’s December!
Well, we are officially in December. The last month of the year and what a year it has been. I actually sent out my bi-weekly newsletter last week and in it I talked a lot about feeling inferior and inadequate. Yeah, it isn’t the nicest topic to talk about, but I also believe in keeping it 100 at all times and sometimes, I don’t feel 100. Sometimes, like everyone else, I feel like I don’t know what I am doing, I am hyper critical of myself and I don’t feel like I measure up to others. Well, I got some pretty amazing responses back and truly I was not expecting it. But I felt the love and it made me sit back and give myself a little more credit.

When you Need Someone To Believe In You:
One of the people that reached out to me was a family member and probably one of my biggest supporters. She told me how proud she was of me and that I need to sit back and appreciate where I am now compared to where I was even just one year ago. First of all, I didn’t know how much I needed to hear from someone that they were proud of me. But not just anyone telling me this, someone close to me that has seen all the work I put into things. To be honest, that kind of pep talk would always come from my mom. She had this way (like so many moms) to tell you how amazing you are and you actually believe it. Well, it’s been eight years since I have heard those words from my mom and to hear them from someone else so close to me really made a difference and it also brought me to tears, in a good way, don’t worry!
Why couldn’t I see myself that way? Why do I always think I have to be doing more and more? It’s something I have to work on for myself. Not just to make me feel better about myself, but because its true. I may not be exactly where I want to be or I thought I would be at 34. But I am miles ahead of where I was. I mean, I just look at this recipe for this miso roasted cauliflower and I am impressed with not only how it turned out but also the pictures I took as well. And I am in this for the long haul, and things take time. So why do I expect so much from myself? Must be the capricorn in me, because I am truly never satisfied.
Reflecting on 2018 to make room for 2019:
So enough is enough. I am taking some time to reflect on all that I have done for 2018. And not just a few minutes of reflection. I am making real time. I am going to write out everything I accomplished, no matter how small or insignificant it could be. Because it’s all those little things that are usually forgotten and those are truly what lead to the big things we see later on down the road. I think it’s necessary to take time and reflect, see what went right and what didn’t work out the way I had wanted. Because you better believe after I am done reflecting, I am moving on to intention setting for the year ahead. I did this last year and I plan on doing it again for 2019. It’s a fun exercise to do that allows you time to put pen to paper and set big goals and dreams. There is no right or wrong answer or dream, it’s only for you to do and see, unless you want to share it with someone. I definitely have some major things I want to work on and I can’t wait to dream them up, put them on paper and see them come to life.
miso roasted cauliflower: Spice up your Life
Ok, back to this miso roasted cauliflower for a minute. I love how it came out and how easy it is to make as a delicious side dish. I drizzled some of my favourite Chosen Foods spicy sesame oil on top after it was done baking. This adds even more flavour and of course some spiciness too. If you aren’t a fan of anything spicy, you could eliminate this and just drizzle some toasted sesame oil on top. But if you like a little heat, I highly suggest adding the spicy one to this miso roasted cauliflower.

Miso Roasted Cauliflower
Preheat oven to 425 F and line a baking sheet with parchment paper.
Mix together the miso paste through to the ginger in a small bowl. Cut the cauliflower into florets and rub the marinade over the cauliflower, coating every piece.
Bake for 25 to 30 minutes. Remove from the oven and drizzle the sesame oil over top. Serve and enjoy!
Make sure that the cauliflower is well spread out on the sheet (not touching each other) to ensure it gets crispy.
Serve topped with some sesame seeds and chopped cilantro if you wish.
