Want to know what I truly hate...? I know, it's a weird way to start a blog post and people always say that the word hate is a strong word, but sometimes it fits. I truly hate the word zoodle for zucchini noodles. I also am not a fan of zucchini noodles in a recipe either. There is nothing good about them in my opinion. They get soggy and watery and just don't do a thing for me. But spiralized sweet potato noodles on the other hand, they are one of my faves. I actually think they hold up quite well when cooked for a short period of time and they pair well with all kinds of different sauces, especially this one.

I am sitting here writing this post, exhausted AF and truly just ready to throw in the towel. But I also want to share this post SO BAD because I've been dreaming about it for weeks. I made it twice in one week, it is that good. I love it with some crispy pieces of bacon, but I have also done it with chopped up sausage as well and both work amazingly well.
When it comes to my meat, I always recommend buying high quality ones made without fillers and other weird ingredients. I love the bacon and sausage from my truLOCAL box.
Also, if you arent cooking bacon in the oven by now, you need to. Total game changer!
Ok, so why am I so tired. Let's just say my cat (Adele) woke me up at 5am because she currently has a UTI and has been having accidents all over my condo. Obviously, I feel so bad for her as she is in a lot of pain (I remember how uncomfortable a UTI is). But the whole morning consisted of trying to follow her around and watching her and where she was trying to urinate so I could clean it up. Then I spent the whole day washing all my sheets, mattress cover and pillows because she had accidents on those too. She had this happen before over a year ago so I know this will last for a few days. She is fortunately on medication and hopefully on the mend really soon.
Alright enough about Adele, she finally fell asleep after a brutal day so at least she is getting some rest. I think I've been feeling so overwhelmed with everything lately and it may just be hitting me now. I have A LOT on my plate, with my breakup, move and dealing with lawyers about the condo we shared and it has been stressful. And as much as I would offer advice to anyone else going through this to take it easy and slow down, I find it hard to take my own advice. Anyone else relate?
These spiralized sweet potato noodles are just the kind of comfort food that I need at the moment. They taste indulgent with the cream sauce and the bacon. I added in some dried cinnamon cap mushrooms too. I used some dried ones that I had on hand and they were perfect in this recipe. I highly suggest mushrooms (if you are a fan) for this recipe. And if you have never tried cinnamon cap mushrooms, definitely check them out. If you want more veggies, feel free to add in something else. Sautéed spinach or other greens would also be great in this dish.
The spiralizer I use and love is this one from Amazon. And for my blender, I use my Vitamix, which I love more than anything.
Without the bacon, this dish can also be prepared plant-based as well. For protein you could add some crumbled tempeh, grilled chicken or top it with an egg. It is pretty versatile. The only constant is the creamy dairy-free cashew sauce which works really well with spiralized sweet potato.
If you want to make the cream sauce ahead of time by meal prepping it, it will last in the fridge for up to 3-4 days. It makes a great meal prep recipe because cooking the spiralized sweet potato and bacon in the oven don't take much time at all.
