Smashed Roasted Radishes with Za’atar
These roasted smashed radishes are tossed in za’atar seasoning and parmesan and baked until golden brown and crispy. Serve it with some Greek yogurt on the side for dipping.

If you love smashed potatoes (who doesn’t?!) then these smashed radishes are a great low carb option that still tastes delicious. A perfect savoury, keto friendly side dish that doesn’t feel like you’re missing out at all. These keto roasted radishes are tossed in a delicious seasoning blend called za’atar and parmesan. Once the smashed radishes are done baking, serve them with some Greek yogurt on the side for dipping.

Ingredients
- radishes
- extra virgin olive oil
- za’atar
- kosher salt
- parmigiano reggiano
- parsley
- Greek yogurt

What is Za’atar
It’s the name of a spice mixture that is used as a condiment. It contains herbs such as oregano, thyme and/or marjoram, sumac, toasted sesame seeds and salt. It can also contain a few other ingredients depending on the region in the Middle East.
You can find the blend at Middle Eastern grocery stores, online at Amazon, or you can make your own.
I love using it on vegetables, like in this sheet pan roasted vegetables with za’atar and halloumi or on top of this whipped feta with burst tomatoes.
How to Make Smashed Radishes
Preheat the oven to 425ºF and place a baking sheet in the oven.
Place the radishes in a bowl and toss with the oil, za’atar and salt.

Remove the baking sheet and place the radishes cut side down. Transfer to the oven and bake for 20 minutes.

Flip the radishes and bake for another 15 to 20 minutes, until tender.

Use a fork to press down onto the radishes to smash them. Quite a bit of water will be released. Use paper towels to press down firmly and remove as much water as possible, it will be A LOT!

Once all the radishes are done, sprinkle the parmesan over top and drizzle with a bit more olive oil. Transfer back to the oven and broil on high (550ºF) for five minutes, until browned and crispy.

Sprinkle the radishes with parsley and serve with yogurt on the side for dipping. Enjoy!
Tips for Making Roasted Crispy Smashed Radishes
If you want to be sure to get browned and crispy oven roasted smashed radishes, here are some tips to help get you there.
- Remove water from radishes: water is the enemy when you’re trying to get something crispy. Be sure to really pat the radishes dry after smashing them. You will need a few paper towels to do this, but it’s essential for getting the radishes browned.
- Remove excess water from the baking sheet: once you smash the radishes, the water is released onto the baking sheet as well. Either pat the baking sheet dry with paper towel or transfer the radishes to a new baking sheet after smashing and patting them dry.
- Drizzle more oil: Once you remove the water with paper towel, drizzle a little extra oil on top to help get them crispy. If too much seasoning came off, you can sprinkle more za’atar on top in addition to the parmesan.
- Keep an eye on the radishes while broiling: things can get browned fast, so keep an eye on the radishes and remove them once they are browned and crispy around the edges.

Ingredients
- 3/4 lb (12 oz) radishes, sliced in half
- 2 tbsp extra virgin olive oil, plus extra for drizzling
- 2 tsps za’atar
- 1/2 tsp kosher salt
- 1/2 cup parmigiano reggiano (freshly grated, plus more for topping)
- 1 tbsp finely chopped parsley
- Greek yogurt, for dipping
Instructions
- Preheat the oven to 425ºF and place a baking sheet in the oven.
- Place the radishes in a bowl and toss with the oil, za’atar and salt.
- Remove the baking sheet and place the radishes cut side down. Transfer to the oven and bake for 20 minutes.

- Sprinkle the radishes with parsley and extra parmesan. Serve with yogurt on the side for dipping. Enjoy!
