The blistered and slightly burst cherry tomatoes are served on top of creamy whipped feta with a sprinkling of za'atar for a Mediterranean inspired appetizer perfect for sharing with guests. It's a beautiful end of summer appetizer, but you can also make it year round.

As for this recipe, I'm pairing in season cherry tomatoes with whipped feta and za'atar for a delicious appetizer. This whipped feta with roasted tomatoes is low on ingredients, but packs a flavourful punch.

So what is Za’atar exactly?
It’s the name of a spice mixture that is used as a condiment. It contains herbs such as oregano, thyme and/or marjoram, sumac, toasted sesame seeds and salt. It can also contain a few other ingredients depending on the region in the Middle East.
You can find the blend at Middle Eastern grocery stores, online at Amazon, or you can make your own.
I love using it on vegetables, like in this sheet pan roasted vegetables with za'atar and halloumi.
Ever since making this viral whipped feta dip with sizzled scallions and hot honey, I've been wanting to make different variations. So I tried my hand at whipped brie with strawberries and basil, so delicious. And now, I have this whipped feta with roasted tomatoes and za'atar.
Making this whipped feta dip is so easy. All you need to remember is to take out your block of feta to get it to room temperature before whipping.

Heat a large cast iron skillet over medium heat. Drizzle in the olive oil. Once hot, add the tomatoes. Cook until softened and about to burst, about ten to twelve minutes. Season with salt and pepper and set aside.
Add the feta to a food processor and process on high until completely whipped, smooth and creamy, about two to three minutes.
Spoon the feta into a bowl, top with the tomatoes, za'atar and fresh oregano.
Serve with pita chips and enjoy!
