If you love smashed potatoes (who doesn't?!) then these smashed radishes are a great low carb option that still tastes delicious. A perfect savoury, keto friendly side dish that doesn't feel like you're missing out at all. These keto roasted radishes are tossed in a delicious seasoning blend called za'atar and parmesan. Once the smashed radishes are done baking, serve them with some Greek yogurt on the side for dipping.

It’s the name of a spice mixture that is used as a condiment. It contains herbs such as oregano, thyme and/or marjoram, sumac, toasted sesame seeds and salt. It can also contain a few other ingredients depending on the region in the Middle East.
You can find the blend at Middle Eastern grocery stores, online at Amazon, or you can make your own.
I love using it on vegetables, like in this sheet pan roasted vegetables with za'atar and halloumi or on top of this whipped feta with burst tomatoes.
Preheat the oven to 425ºF and place a baking sheet in the oven.
Place the radishes in a bowl and toss with the oil, za'atar and salt.
Remove the baking sheet and place the radishes cut side down. Transfer to the oven and bake for 20 minutes.
Flip the radishes and bake for another 15 to 20 minutes, until tender.
Use a fork to press down onto the radishes to smash them. Quite a bit of water will be released. Use paper towels to press down firmly and remove as much water as possible, it will be A LOT!
Once all the radishes are done, sprinkle the parmesan over top and drizzle with a bit more olive oil. Transfer back to the oven and broil on high (550ºF) for five minutes, until browned and crispy.
Sprinkle the radishes with parsley and serve with yogurt on the side for dipping. Enjoy!
