I don't know about you, but I love me some potatoes. I'll pretty much take them any way I can. Whether it's roasted, baked or mashed, potatoes are life. Sure, sweet potatoes are great and super nutritious, but don't discount white potatoes simply because they are, well, white. This roasted potato salad is made with a fresh green goddess dressing that you can whip up in no time.

I have to be honest, I truly never thought that I'd feel like myself again after my recent 14-year relationship ended. I thought that I'd feel anger and sadness forever. But nearly five months later, I am starting to feel like myself again. The pain is still there, and I think thats normal. But I made a conscious effort to focus on gratitude and I cannot even begin to tell you what a difference this has made.
Since January, I made more of an effort to write down three things I am grateful for everyday. Previously, I had done this but I fell out of the practice and sure enough, the anxiety also peaked. I am not saying that gratitude can replace drugs in the event that you need them to deal with anxiety or depression. What I do believe is that when we learn to focus on the present moment a bit more and be consciously grateful for what we already have, it can make a difference.

In the last few days, I have really felt the shift in me. I no longer feel bound to this story, to the pain or to the thought that I "should be" doing something else. Instead, I feel free. And ready. Ready for new life experiences. Although things worked out differently than I had imagined, I trust that this is how it is supposed to happen.
The hurt and the pain I experienced was necessary for me to grow. And I 1000% believe this. All of this to say, that if you are experiencing uncomfortable shifts in your life right now, I get it. And although it feels like shit right now, trust the process. Let go of the belief that you can control everything, because you can't. And learn to trust. Trust that there are bigger things at play and your life is shifting to allow for greater things to take place.

If you are new to fingerling potatoes, you are in for a treat! They are probably my favourite white potato. I don't know what it is, I think it's something about the shape that I love. And when you roast them with some oil and sea salt, it is heaven in a bite.
Oftentimes, I just roast them like that for about 30-35 minutes and then broil them for a few minutes to get them extra crispy. For this recipe, I did just that. Traditionally a potato salad is made with boiled potatoes, but I think that roasting the potatoes makes them even better.
I am not sure where the term green goddess came from, but I am here for it. It has a nice ring to it but most importantly, this dressing is SO DELICIOUS. There are two different herbs packed into this dressing (basil and dill) and they both provide a nice balance of flavours. To make it really creamy, I used Chosen Food's Avocado Oil Mayo. I also added an anchovy to provide a bit more flavour, but if you want to keep it vegetarian, you could use capers instead.
For this roasted potato salad, I also used some fresh green beans that I cooked in a pot of boiling water for just one minute. Then a quick dip in an ice cold bath and you are all set with the green beans. If you wanted to add some protein to this, some canned tuna would be great, or even some soft-medium boiled eggs. I usually serve this roasted potato salad as a side dish, so I don't need to add any protein to it.

For all the changes that have been occurring over the last five months, I have found that being alone was so imperative for me. I've never been on my own (in 14 years) and I think it was important to do this.
Dating is something that I know is around the corner for me and it also scares me a little. I am unfamiliar with all the dating apps out there since I bypassed that whole scene and now it seems to be the norm? Maybe, I should start a separate blog area for when I do start dating?! Because I think it will be interesting... or at least provide some good entertainment.
