These air fryer brie bites may just be one of my most favourite appetizers to date. They're crispy, filled with gooey, melty brie (YUM!), fig jam and you can bake them in your air fryer in under five minutes! Make these for a crowd and watch them disappear in no time. Plus, everyone will love biting into them and watching the brie melt/explode out. I mean, that's the best part of baked brie right?!
I just gotta say how obsessed I am with my new air fryer. I recently upgraded my air fryer to this Cosori Pro Air Fryer and I'm super impressed. I was previously using a model from T-Fal and it worked fairly well, but was limited in terms of controlling the temperature as it was a dial rather than digital. And I am really in love with my new one. I purchased it on Black Friday and can't recommend it enough. It's large enough to serve four people and I love how crispy it gets my food.

This air fryer brie is so simple to make and you only need a handful of ingredients, the topping is extra and optional (but I do recommend it!).
Making these delicious brie phyllo bites in the air fryer is so easy.
I've included step-by-step photos and a video to make it easier for those that are more visual learners.
Essentially, all you really need to do is wrap your brie in one sheet of folded phyllo until it's in a little package. Of course, we're adding a dollop of fig jam on the brie to add that sweet and salty combo.
Before getting started on the phyllo wrapped brie bites, you'll want to toast the walnuts and fry the rosemary in oil. This is optional, but I loved adding this on top.
Heres how to make it.
Place one sheet of phyllo on a clean work surface and brush half with melted butter.
Fold in half and then move the phyllo so the long side is facing you.
Place one square of brie on the phyllo just below the midway point. Top with a dollop of fig jam.
Fold the phyllo over the brie and then fold over both sides. Brush with butter (work quickly, so it doesn't dry out).
Wrap the phyllo up into a little package (don't fold it too tight). Brush the top with butter.
Keep brie bites under a damp clean kitchen towel while you repeat with the remaining bites.
Place the brie bites seam side down in the air fryer.
Bake at 370℉ for four minutes, until golden brown on top.
Transfer the air fryer brie bites to a plate and top with rosemary, chopped walnuts, honey and flaky salt. Enjoy warm!
I've tried three different air fryers over the years, and my most recent is also my favourite.
It's the Wonder Oven from Our Place. I absolutely love it and highly recommend it, for several reasons.
The only drawbacks I've noticed while using this is the timer function. It's not digital and can be hard to be precise when using it. So I prefer to just use the timer on my oven or microwave when using it to be sure it's exact. The knob also has to be turned off manually by turning it rather than having an on/off switch.
But honestly, other than those missing features, it's such a great appliance and I do recommend it.

Of course, if you don't have an air fryer, you can bake these in the oven.
Bake them at 395℉ on a parchment lined baking sheet for eight to ten minutes, until they're browned and crispy on top.
