Easy Breakfast Meatballs

These days it’s all about having easy, convenient foods that can be stashed away in my freezer for quick meals. As a new mom, working at home for herself and also taking care of a ten month old, I’ve realized I don’t have time in the morning for much. But I need to eat. Breastfeeding hunger is no joke and I need to have a nourishing breakfast so I can take care of myself and the little one. These breakfast meatballs are easy to prep and are perfect to have in the busy mornings. They freeze great and all you need are some eggs, greens and toast to make it a full meal. Luckily all those things cook super quickly too.

Ingredients

Here’s everything you’ll need to make these meal prep friendly pork breakfast meatballs.

  • ground pork
  • brown sugar
  • fennel seeds
  • garlic powder
  • dried sage
  • dried thyme
  • salt & pepper

How to Make Breakfast Meatballs

Preheat the oven to 400℉.

In a large bowl, combine all ingredients from the pork through to the thyme. Do not over mix.

Form the pork mixture into balls, using about 2 1/2 tablespoons of meat per ball. Use a cookie scoop to make this quick and easy.

Place the balls on a baking sheet and cook for 11 to 12 minutes. Turn the oven to broil and cook for an additional three to four minutes, until slightly browned on top and cooked through.

How to Store

You can freeze away uncooked (raw) breakfast meatballs and cook them from frozen whenever you need.

Add an additional three to five minutes of cook time if doing this.

If storing cooked meatballs, freeze in an airtight freezer safe plastic bag or container for up to three months. Reheat in the oven from frozen, or thaw overnight in the fridge.
