Delicious, easy to make spelt pancakes with chocolate chips and coconut whip cream.

For the topping:
  1. Mix the dry ingredients in a large bowl (spelt, baking soda, sea salt and collagen).

  2. Mix the wet ingredients in a smaller bowl (almond milk, eggs, vanilla, avocado oil). 

  3. Add the wet ingredients to the dry and mix until combined, do not over mix. 

  4. Heat up a pan on your stove over medium heat and use a little bit of coconut oil if you need.

  5. Pour a large scoop of batter in the pan (and add some chocolate chips if you are using). Cook until bubbles start to form and the one side is starting to get golden in colour, then flip and cook for an additional minute or so. This should take only a few minutes per pancake. 

  6. Keep the pancakes in your oven to keep warm, just set the oven on the lowest possible setting and keep them on a baking tray. 

  7. When you're done making the pancakes, serve with sliced banana, extra chocolate chips and coconut whip cream. Enjoy!
