In a medium sized bowl, add the oat flour, peanut butter, maple syrup, coconut oil, vanilla, salt, nutmeg and cinnamon. Mix well using a spoon or your hands.
Fold in the chocolate chips and mix again.
Using a small cookie scoop or your hands, scoop the cookie dough into balls and place in a container with a lid. Place in the fridge until ready to enjoy!
Bake the flour first: if you're worried about eating raw flour, simply spread the flour on a baking sheet and bake at 325ºF for 7 to 8 minutes. Then proceed with the recipe as is.
