Whipped Feta with Roasted Tomatoes & Za’atar

Description

This creamy whipped feta dip with roasted tomatoes and za’atar is the perfect appetizer for serving to guests. Top with fresh oregano and serve with pita chips on the side.


Ingredients

Units Scale
  • 2 tsps extra virgin olive oil, plus extra for drizzling
  • 1/2 lb cherry tomatoes
  • kosher salt and pepper, to taste
  • 12 oz feta cheese, room temperature
  • 1/2 tsp za'atar
  • 2 tsps fresh oregano leaves, roughly chopped
  • pita chips, for serving

Instructions

  1. Heat a large cast iron skillet over medium heat. Drizzle in the olive oil. Once hot, add the tomatoes. Cook until softened and about to burst, about ten to twelve minutes. Season with salt and pepper and set aside.
  2. Add the feta to a food processor and process on high until completely whipped, smooth and creamy, about two to three minutes.
  3. Spoon the feta into a bowl, top with the tomatoes, za’atar and fresh oregano. Serve with pita chips and enjoy!
