Stuffed Breakfast Sweet Potato

Phew, for a while there, I thought I was never going to hit publish on another (food) blog post! I had some serious writers block and a lack of creativity that I just couldn’t shake, but for now luckily that seems to be over. And thankfully this stuffed breakfast sweet potato has entered the picture. To be fair, over the holidays, all I wanted to do was chill and not cook/create things for anyone but me. Sorry, not sorry. It takes quite a bit of work to create something, test it, tweak it, write it down and then publish a story about it and I just wanted none of it. I made some pretty good meals, but I kept them for myself and got back to just creating things on a whim without the thought in the back of my mind about whether or not this would be “Holistic Foodie approved” or Instagram worthy.

The Only Farro Salad You Will Ever Need

Being a holistic foodie, I have had my fair share of salads, both at restaurants and at home and I can honestly say that if I were to only ever have one salad for the rest of my life, it would be this farro salad! The dressing is kept super simple, but the addition of fresh herbs is what really makes this dish stand out. I really cannot take all the credit though, I was majorly inspired from a trip out to New York City where I first tasted this incredible farro salad.

Cherry Overnight Oats With Chocolate and Coconut Whip

When you make breakfast that tastes like dessert but is actually healthy for you… (*mind blown*). These cherry overnight oats are insanely good and if you are already a fan of overnight oats then you are in for a sweet treat! When I tasted the first bite, it tasted like chocolate cake with cherries, which would be similar to black forest cake, except I always hated black forest cake so I don’t really know what to make of that. It is the best recipe for overnight oats I have ever tried and I have tried them all.

Mini Berry Tarts: Vegan, & Gluten Free

Last year I had quite the love affair with making mini berry tarts with all the berries I could get my hands on. Seriously, I couldn’t get enough and neither could anyone I served it to. So this year, I decided it would be a great idea to actually write down the mini berry tarts recipe and get it out to you. I also had the genius idea to make one of the coconut creams chocolate flavoured, because chocolate makes everything better, am I right?! By using coconut milk, I kept these dairy free and I don’t think you will miss the traditional cream one bit. Vegan berry tarts that are gluten free and refined sugar free, so you can have your cake and eat it too!

No Bake Chocolate Peanut Butter Bars

I had been stuck in a food slump as of late and could not think of anything to make that was new or creative, which was a real bummer when you are trying to blog about food. One afternoon I wanted to make caramel chocolate ice cream with frozen bananas and have it on a cookie crust, that recipe was a MASSIVE fail and just did not work at all! Not too pleased with myself, I put the caramel in the fridge, because I had only used a bit of it and there it sat for a few days. Every time I opened the fridge, I saw it there staring back at me…taunting me (ok, I’m exaggerating but it felt like that) and I didn’t have a clue what to do with it. Then, I just knew what had to be done and quickly whipped up these no bake chocolate peanut butter bars and knew at first bite these were legend………………..wait for it, dary, legendary!
