French Lentil Salad with Kale and Feta

I think that a lot of people think they don’t like lentils. But, that’s probably because they haven’t had french lentils, or black lentils. Unlike green, brown or red lentils, french lentils hold their shape. And if you’re having them in a salad like this, it’s essential to use them so they don’t become mushy. I’ve always been team lentil, but even more so now because they can be used in so many ways. I love crisping them up in the oven after cooking and using them as salad toppers or just eating them on their own, with an egg and all the spices. Hopefully, if you try this french lentil salad, you’ll understand why I love them so much too.

Roasted Cauliflower Salad with Wild Rice & Prunes

Can you believe its March already?! I’m not sure where the first few months of 2020 have gone already, but is it safe to say, I am kinda excited for the arrival of spring? I know, we definitely have more of winter to get through, but the promise of spring is coming. And I’m so excited for all the fresh produce coming up, and of course more pool hangs at my condo with friends. But before we welcome spring, let’s appreciate the more seasonally appropriate veggies we do have. This roasted cauliflower salad with wild rice is so hearty, you can eat this as is for a full meal. It’s got lots of flavour going on, with the addition of za’atar, halloumi, pomegranate and California Prunes, which are available year-round.

Remember when kale was all the rage a few years ago? It was the number one ‘superfood’ on everyone’s radar. As annoying as that term is, it did bring kale front and centre and for that I am grateful. When I first tried a kale salad, I wasn’t a huge fan because I simply wasn’t making it correctly. Now that I have mastered the art of the kale salad, it is my all time favourite green in the winter to make a salad with. This kale tahini salad will completely blow you away with its taste and I can’t wait for you to try it.

Loaded Burger Bowl: With Special Sauce (Paleo)

To be completely honest, I don’t even want a regular burger on a bun anymore, just feed me this salad and I am good. As long as the special sauce is on there, I don’t need much else in life. I added a few non traditional ingredients, but they work in this recipe and I know you’ll love it too.

But, I did get to experience just a little preview of summer when I was in Vegas a few weeks back for my friend’s bachelorette. I had SO MUCH fun! It was a well needed girls trip that had me laughing so much, I didn’t want to come back to reality. But before I left for Vegas, I made these vegan mason jar salads. These creamy, chocolatey steel cut oats are the EASIEST way to make oats. Basically dump all the ingredients into your @instantpotofficial, set it and walk away. No stirring required 👌🏻. This means you can do other things in the morning, like sleep longer 😜. If you wanna get all fancy add some coconut whipped cream, cherries 🍒 and a couple squares of dark chocolate (frozen cherries work too, just defrost them). Are you a pad thai lover too?! Pad thai is one of Are you a pad thai lover too?! Pad thai is one of my favorite dishes to eat and to make 😍😍. CHEESY SQUASH PASTA SAUCE: let’s just get this o CHEESY SQUASH PASTA SAUCE: let’s just get this out of the way - I love cheese and quite enjoy it, but I also loveeee this dairy-free sauce. I added lots of savoury elements to this sauce so that it’s not overly sweet bc this is a pasta sauce after all 😬. I’ve had SO many people make this recipe over the years and they all love it. I currently have a jar in my freezer just waiting to be used soon too! Here’s what you’ll need to make this:

- Squash (butternut or honeynut are ideal)
- Cashews (raw)
- Garlic
- Lemon or apple cider vinegar
- Smoked paprika
- Ancho chili powder (or regular chili powder) I just like ancho better
- EVOO
- Pasta (I like these big pasta tubes for optimal sauce soaking 😉)
- Fresh sage (so good crispy and served on top!)
- Pumpkin seeds
- Spinach (or other green to add-in)

CAULIFLOWER STEAKS: I’ve been pretty into caulif CAULIFLOWER STEAKS: I’ve been pretty into cauliflower steaks for good reason 😍. When you slice them into steaks and sear them on a cast iron, they get so nice and crispy, and then toss them in this harissa and honey glaze and it’s just absolute caramelization heaven 💯. Serve alongside some lentils and yogurt to help cool everything down. Here’s what you’ll need to make this:

BODY IMAGE: Even though I’ve worked hard to move BODY IMAGE: Even though I’ve worked hard to move past body image issues & I understand how diet culture works, that doesn’t mean I’m immune to experiencing negative thoughts about my body. For the most part, I’ve learned to respect my body, but certain days or triggers can bring back painful memories & make me question my worth.

One of those days was just this past NYE. Getting dressed up in clothes other than sweats (lockdown life 😅) reminded me that my body had changed. Clothes fit a little tighter & when I stood there in my bedroom panicked about what I was going to wear, a lot of shit came up. Stuff from my past, when I’d get upset, swear I was going to “do better” tomorrow & restrict. Other memories resurfaced. Ones where my ex would make comments about my body & appearance (all under the guise of being a joke, of course 🙄). So in this moment, I spiraled a little. I worried that Shayne would notice. And then what would happen? Would he be turned off or no longer interested in me? Then came the thought, would he cheat on me, too? Those previous insecurities resurfaced & in those brief moments, I had the thought that I needed to “do better” tomorrow. Because that’s the thing about words. We’re told they don’t matter, or that they shouldn’t matter. But that’s not really true.
.
So what did I do in this moment? I reminded myself that I’m worthy no matter if my clothes feel a little tighter. I also reminded myself that some people are just assholes 🙃. And I chose the clothes that made me feel the best. And when I came out with that outfit on, the only thing he said was “you look beautiful.”
.
Clearly, I don’t have all the answers about navigating body image. In many ways, I’m still working on it. But it does get easier when you learn to not let those thoughts & past experiences consume you. When you surround yourself with positive & loving people. When you learn to recognize diet culture & the impact it still has on you & do the work from the inside to heal. You can move past them, but yeah they’re still there - & that’s normal.

CHOCOLATE PUDDING! Make any day better with chocol CHOCOLATE PUDDING! Make any day better with chocolate 🍫. I highly suggest trying out my easy 5 ingredient chocolate pudding. I’ve made this pudding SO many times over the years and it’s always so good. Plus it has some serious gut healing benefits to it too- hello gelatin ❤️. Here’s what you’ll need to make this:

- Full fat coconut milk
- Gelatin
- Cocoa powder
- Sweetener of choice
- Vanilla

If you like it very thick, add more gelatin, or keep it thinner. Make it your own 👌🏻.

NASHVILLE HOT CHICKEN & WAFFLES: sometimes you jus NASHVILLE HOT CHICKEN & WAFFLES: sometimes you just need a stack of chicken and waffles, right!? So I’ve never fried anything before and I was equal parts excited and terrified, buttttt @shaynegold87 sure has and he whipped up this crispy and crunchy fried chicken 🍗. It tasted like KFC to me, only better. We used avocado oil to fry it because it’s a high heat cooking oil (and I saved most of it after straining it through a sieve and cheesecloth). We made extra to have the next morning on waffles, because if you’re gonna deep fry, you might as well go all out 😍. Saturday brunch cravings satisfied 👌🏻. #brunchathome

Let’s get this one out of the way first - dietin Let’s get this one out of the way first - dieting doesn’t just refer to traditional dieting such as a low-carb diet, Jenny Craig, or even Weight Watchers (no matter what they refer to themselves these days). It’s also paleo, Whole30, noom, keto, counting macros or calories, or other diets marketed as a “lifestyle change.” So yeah, it’s a lot 💁🏻‍♀️.

There are many problems with dieting, one of the major ones is that they simply don’t work. Sure when you start one, it may seem like its working, but as soon as you deviate from it, then what happens? Cravings, followed by overeating, or feeling out of control around the foods that were once restricted. Feelings of guilt for deviating from your diet. Feelings of shame and failure. So what do you do? Hop on another diet, or try that diet again. Because we’re convinced that this time it’s going to work. This time it’s going to be different. Only it isn’t.
