Healthy Salmon Burgers With Wasabi Aioli

Usually, I am pretty basic when it comes to salmon, I love cooking it on a cast iron and creating a crust on the skin. Then I season it with just sea salt and lemon. It’s my go-to when I don’t know what else to make and I have become reliant on it for so long. So, I definitely needed to switch it up when it comes to cooking salmon. I have always loved tea, especially green tea and whenever I go to a Japanese restaurant, I always want a matcha dessert at the end. There is something so delicious about a creamy matcha creme brûlée, my personal favourite dessert at a local sushi spot in Toronto. I wanted to create my own type of dessert using matcha, so this vegan matcha cheesecake was born. I also knew that I wanted to add in a little something extra, so I used some of the cheesecake to also make a raspberry version too. I’ve been really into carbs lately, I mean, I’ll be honest I am always into carbs, but now it seems to be more than ever. And you know what, I am going with it. Rather than trying to fight my body or stifle my needs with more protein or  fat, I am letting myself have the carbs. Because this will also pass. The good thing about my recent carb extravaganza is definitely this butternut squash pasta sauce that I have been slathering on penne. If you wanna make these vegan and gluten free crepes, check out the recipe below and save it for later!

3/4 cup oat flour
1/4 cup tapioca flour
1 tsp baking powder
1 cup dairy free milk (almond or oat)

Add all ingredients to a blender and blend until combined. Heat a small skillet over medium heat and add some coconut oil. Add 1/4 cup crepe batter to the pan and swirl the pan to coat with the batter. Cook for 2-3 minutes, slide a spatula underneath and flip. Cook for 1-2 more minutes. Serve with @nutiva chocolate coconut butter inside, strawberries, coconut flakes, pomegranate, chopped @middaysquares bar and drizzle with melted chocolate 🍫. Enjoy 😍😍.

Instagram post 2179551065752867618_1635839696 Apple crisp in muffin form?! Yup 😍. These apple cinnamon muffins are now up on the blog and they are delicious 🤤. I played around with the recipe a few times to get them just how I wanted them and it was worth it. My freezer is now stocked with apple muffins but no complaints about that 😏. These babies are gluten free, and can easily be made paleo if you need.

It’s true- I made these 30 minute @instantpotofficial pork carnitas and froze most of it for another day. Because I’m cooking for one, that means I have to be extra mindful of food waste and I like preparing things that can freeze well. For these, just take the leftovers out of the freezer the night before and let it defrost. Then crisp them in the oven on broil after. Easiest and most delicious tacos for any day of the week, yes please 👌🏻😍.

Just make sure to have all the toppings for your tacos to make weeknight tacos extra easy. I like adding some smashed avocado to the base and some extra veggies like 🌽🌶. Full recipe for these tacos is on my site, the link is in my bio ☺️.

The flavours are so balanced and delicious, plus the spices... yes please 👌🏻. So I simply had to create one of my fav Thai dishes - red curry coconut chicken. Because if I’m being honest, as much as I love Thai food and takeout, it doesn’t always love me back, digestively speaking. This creamy coconut Thai chicken curry is a little different bc I added lots of veggies to it (three different ones to be precise 🙈). I’ve got the full recipe up now and if you prep a few things ahead of time, this can come together pretty easily.

Not only are they super easy to whip up, but they freeze well too. You can serve them with a fried or poached egg on top if you want 👌🏻. One of the reasons I have made the switch to oat is because of the taste and creaminess. Because for the most part, I use milk in my morning matcha and other lattes and I love when it gets frothy and creamy. And nothing gets it creamier or frothier than @silk_canada’s oat beverage (for real, I couldn’t believe it- check out my stories!). You can choose from three different and delicious flavours (plain, vanilla and chocolate). I used the vanilla in these pumpkin chocolate oatmeal bars and it worked like a dream. I added the most flavourful toppings to make it super savoury and I haven’t been able to stop eating it, alongside some of those new @marysgonecrackers of course (if you know, you know!).

So what did I add to this hummus exactly? I made some of my own dukkah, which is an Egyptian nut and spice blend that is typically served with bread or fresh veggies. I’m telling you- if you’ve never tried it, you NEED to make some. It’s super easy to make and you will want to top everything with it after 🤤. I also fried some sage and added some pomegranate to it. They’re soft in the middle with lots of melty chocolate chips and crunchy pecans and they go great with a glass of milk 🥛. I’m pretty sure they’re my new fave cookie recipe but that won’t stop me from thinking up new flavour combinations...

I love that I have steel cut oats ready in 20 minutes and I can easily re-heat them on the stove after. The creaminess from the pumpkin along with the spices makes this recipe perfect for fall. And to make it extra fun, I highly suggest adding some chocolate chips, pecans and any type of granola you have on hand. Thank me later when the chocolate chips melt in your oats ☺️👌🏻.

Do you have a favourite breakfast item to meal prep?

I don’t think there is another meal that is more comforting than pasta. Smother it with some kind of creamy sauce and seared scallops like this one and I am all 😍. I made the sauce dairy free by using cashews but you wouldn’t be able to tell one bit.

If you struggle with making scallops, I’ve got all the tips for making them perfect every time. They’re expensive af, so I get why most people are scared to cook them. And this month, I partnered with @mscbluefish to share more about finding and supporting sustainable seafood. When you choose fish products that are MSC certified that means you are supporting seafood that is wild, traceable and of course sustainable. So I always look for that little blue MSC checkmark ✔️. There are tons of sustainable seafood options available in the canned, fresh and frozen sections (and at the fish counter).

I chose to use some @mscbluefish smoked salmon to make a five minute smoked salmon dip. I even used some cashew cream cheese to keep it dairy free, although you can use regular cream cheese too. I’ve got quite a few pumpkin recipes up on my site if you want to check them out, including donuts, these no bake pumpkin bars, pumpkin spice granola and instant pot pumpkin steel cut oats. These bars take a little time to make because of the layers, and they’re messy, but omg they’re delicious. And I don’t care if after all of it I have pumpkin on my face. But maybe don’t eat it on a first date 😜. Or do it and see what happens 🤣.

If you’re after that melty, decadent, sweet and salty combo I think you’ll love these. Flaky sea salt is not optional! These cookies are on the softer side, so if you’re team soft cookie rather than team crispy, you’ll want to make these 😍. I used @lees.provisions ghee for these which gives them a rich flavour but you can use regular butter if you want. And they’re also gluten free too if you need that in your life. This kale salad is loaded with all the things, like sweet potato, lentils, walnuts, green onions, mint and goat cheese. For the goat cheese I kept it dairy free and used a delicious cashew cheese from @vegnatureng. This cheese is legit 💯 and slices just like goat cheese would. Top it off with a bright and beautiful beet tahini dressing and you have got yourself one amazing salad.

But for reals this seedy granola is not like your typical granola, but for lack of a better word that’s what I’m calling it 🤷🏻‍♀️. They are cheesy little clusters of seeds and they make the BEST topping. Top your soup, salads, bowls or slices of toast with them (or just eat it by the handful) and see what I’m talking about.
