Hot Honey Chicken Thighs: Made in One Pan

My love for all things hot honey isn’t going anywhere. That sweet and spicy combination just gets me every.single.time. And when you combine that with chicken, something magical happens. Then again, something magical always happens whenever I eat chicken thighs. It’s my favourite part of the chicken, especially the bone-in and skin-on pieces, YES PLEASE! If you’re like me and love it too, then you’re gonna want to give this hot honey chicken a try. Serve alongside some crispy baby potatoes and kale and make it all in one pan too. What’s not to love about that?!

Slow Roasted Salmon with Fennel & Citrus

This is another amazing one pan dinner that comes together easily and cooks fairly quickly. Yes, even though this is a slow roasted salmon, it’s still ready in under 45 minutes total! This makes a great dinner for a quick weeknight or works just as well to serve to guests (or a few special people). Because of how it’s plated, the brightness of it (hello citrus!) and all that colour, it shows off beautifully.

Want to know a fun fact… my favourite food growing up was chicken. Is that a little strange, for a 7 year old to request chicken for dinner multiple times a week. In fact, I loved chicken so much that when we had to draw our favourite food in class, mine were chicken legs. Most kids would draw candy or pizza, and then there were my chicken legs with mashed potatoes. But can you blame me? Crispy chicken is my favourite, especially, bone-in and skin on… yes please! This slow cooked chicken and potatoes is a weeknight dinner dream. It’s made in one pot and because you sear it after for a few quick minutes, you are rewarded with crispy skin.
