I recently went apple picking and picked WAYYYY too many apples. So what’s a girl to do with all those apples? Make these apple crumble bars of course! Remember a few months back when everyone was in lockdown and baking banana bread every week. Ha! Good times, good times (not really). So now that we’re approaching fall, maybe it’s time to switch to pumpkin bread? I think it’s a very good idea personally. So I created this delicious vegan gluten free pumpkin bread. And not only is it low in ingredients, it’s moist (sorry for using the “m” word) and made in just one bowl! I’m all about less clean up, so if there’s a way to make something in one bowl, you better believe I’ll do it.

Healthy Peach Crisp: For Breakfast or Dessert

Is there anything better than a crisp in the summer? There’s something about having a hot crisp with fresh and in-season fruits and a crumbly oat topping. For this crisp, I decided to keep it to stone fruits since they’re in season right now, plus they’re delicious. And this healthy peach crisp just happens to be low in sugar, packed with fibre and makes a perfect breakfast or dessert. Obviously, if you have it as a dessert, a scoop of ice cream or coconut whipped cream is highly recommended.

Baked Oatmeal Cups: Vegan & Gluten Free

Growing up, I never really ate oatmeal. It was more of a quick cereal (or pop tart!) kinda household. So when I got older and started living on my own, my whole world was turned upside down when I tried overnight oats for the first time. Prior to that, I had hot oatmeal and it was ok, but I didn’t add in fun toppings (aka nut butter) or anything. Since having overnight oats years ago, oats have become a big part of my breakfast now. And these protein packed, blueberry baked oatmeal cups are the new star of the show. They make a great meal prep option and they’re just so easy to whip up.

Best Ever Chocolate Hazelnut Granola (Gluten Free & Vegan)

Best ever is a strong statement and it seems that nearly every food blogger deems their recipe the best, but you know what, this really is the best ever. Gluten Free Baked Pumpkin Donuts

Funny thing, I never used to like donuts. Does that make me weird? I hope we can still be friends. Well, either way, they just weren’t my thing. From a young age, everyone here (in Canada) loves to get these little donuts called timbits (from Tim Hortons) and I would always turn my nose up at them. It actually wasn’t until Krsipy Kreme made its way to Canada that I actually liked donuts. At the time, in high school when it first came to Canada, it was all the rage. So my friends and I would head over, eat the donuts while we waited for our order and then go home with a dozen or so. There was something about a Krsipy Kreme that made me actually like donuts. Does that make me more American than Canadian?! I don’t know. So, I wanted to make something that wasn’t overbearingly sweet and not fried. So I put my baking hat on (I don’t actually have a baking hat) and got to work.

Instant Pot Steel Cut Oats: Vegan Pumpkin Pie Flavour

I am usually late to the game when it comes to new trends. So in staying with this theme, it only makes sense that I very recently added an Instant Pot to my life. I got it in the summer and have really begun using it more and more now that fall is here and winter is coming (yes that is a GOT reference). But, I can totally see why people are raving and loving their Instant Pots, they make cooking a lot easier and so much quicker. I was so impressed when I made these Instant Pot steel cut oats in only minutes. Plus the best part, is that you just set it and it does its thing, you don’t need to hover over the stove, stirring and watching the oats cook.

Birthday Cake Energy Balls + What I am Loving Lately

Funny thing about me is I actually don’t really love too many sweets and birthday cake is usually a little too much for me, but birthday cake flavor is delicious. So I made these healthier birthday cake energy balls and obviously had to use sprinkles. They add such a nice touch and what is a birthday cake without sprinkles? Sad, it’s a sad freakin’ cake. These were so good, they didn’t last longer than 24 hours in my house… so you’ve been warned.
