Crispy Potato Nests with Quail Eggs + Chorizo

Things just get 10x cuter when they’re mini, right?! I’ve recently fallen in love with quail eggs. Not only are they mini and super cute, they’re also really tasty and a nice change from regular eggs. And they’re perfect in these crispy shredded potato nests. I’ve added some Mexican flavours with chorizo sausage, jalapeño and cilantro. These grab and go potato cups are great for meal prep too!

Harissa Chicken Thighs in Lettuce Wraps

Nothing quite says spring and summer like lettuce wraps! And these shredded harissa chicken thighs are so perfect tucked inside. Although this is one of those recipes that are on the messier side (in terms of eating them), they’re well worth the mess. I’ve topped these crunchy wraps with beautiful additions like a spiced almond mix, all the fresh herbs and a simple sumac-lemon yogurt dressing. The flavours in this recipe will definitely make your tastebuds sing and your mouth very happy.

One of the first vegan restaurants I fell in love with in Toronto was Fresh. It defintely became a go-to when I moved to Toronto about 7-8 years ago. Although I don’t frequent this restaurant as much anymore, I still always think about a few of their dishes from time to time. One of those dishes is their Phyto Salad recipe. Which is why I made this vegan soba noodle salad with creamy tahini dressing. Don’t let the ingredient list intimidate you, this soba noodle salad can be prepped in advance to make things easier.

Roasted Cauliflower Salad with Wild Rice & Prunes

Can you believe its March already?! I’m not sure where the first few months of 2020 have gone already, but is it safe to say, I am kinda excited for the arrival of spring? I know, we definitely have more of winter to get through, but the promise of spring is coming. And I’m so excited for all the fresh produce coming up, and of course more pool hangs at my condo with friends. But before we welcome spring, let’s appreciate the more seasonally appropriate veggies we do have. This roasted cauliflower salad with wild rice is so hearty, you can eat this as is for a full meal. It’s got lots of flavour going on, with the addition of za’atar, halloumi, pomegranate and California Prunes, which are available year-round.
