Harissa Chicken Thighs in Lettuce Wraps

Nothing quite says spring and summer like lettuce wraps! And these shredded harissa chicken thighs are so perfect tucked inside. Although this is one of those recipes that are on the messier side (in terms of eating them), they’re well worth the mess. I’ve topped these crunchy wraps with beautiful additions like a spiced almond mix, all the fresh herbs and a simple sumac-lemon yogurt dressing. The flavours in this recipe will definitely make your tastebuds sing and your mouth very happy.

One of the first vegan restaurants I fell in love with in Toronto was Fresh. It defintely became a go-to when I moved to Toronto about 7-8 years ago. Although I don’t frequent this restaurant as much anymore, I still always think about a few of their dishes from time to time. One of those dishes is their Phyto Salad recipe. Which is why I made this vegan soba noodle salad with creamy tahini dressing. Don’t let the ingredient list intimidate you, this soba noodle salad can be prepped in advance to make things easier.

French Lentil Salad with Kale and Feta

I think that a lot of people think they don’t like lentils. But, that’s probably because they haven’t had french lentils, or black lentils. Unlike green, brown or red lentils, french lentils hold their shape. And if you’re having them in a salad like this, it’s essential to use them so they don’t become mushy. I’ve always been team lentil, but even more so now because they can be used in so many ways. I love crisping them up in the oven after cooking and using them as salad toppers or just eating them on their own, with an egg and all the spices. Hopefully, if you try this french lentil salad, you’ll understand why I love them so much too.

WOW, I am just gonna say it- this recipe is INSANELY GOOD. I think it may just be one of fave recipes that I’ve posted in a while. It’s got everything – spice, comfort and it’s still pretty healthy too (which is a bonus!). I mean, what more can you ask for in a recipe? These paleo chicken tenders are baked in a delicious coating of almond flour and savory spices. And then you dunk them in a wildly delicious hot honey with some fresh thyme. Best ever?! Yeah, I went there. This recipe came to me during the time that is now known as Covid-19 quarantine. Roasted chicken is actually one of my favourite things to make and eat. Maybe this sounds crazy, but I’ll say it anyways, I think roasted chicken may just be one of the best foods you can eat. Yes, even over a steak or another fancy cut of meat, so long as its cooked right. It has this unique ability to transform into almost anything you want. Think of how many different ways you can prepare chicken, it’s truly something special. And roasting a whole chicken kind of takes the cake in my opinion. This roast chicken in a cast iron skillet is definitely the ultimate way to cook chicken.

Healthy Sesame Chicken: Gluten Free & Paleo

Is there anything better than making a dish reminiscent of takeout, but with healthier ingredients? I don’t frequent the mall food court much anymore, but when I did, I loved getting that fried chicken with all that sticky sauce. You know the type. Comfort food at its finest, I think. I still get cravings for sesame chicken and other types of fried chicken every now and then. Which is why I created this healthy sesame chicken. It tastes like it’s breaded and fried, but it’s not. And the tahini-sesame-orange sauce on top is irresistible.
