Tacos and pizza are definitely some of my favourite foods. But for some crazy reason, I haven’t created or shared a pizza recipe yet?! I knew that needed to change. Once I created this creamy, dairy free roasted garlic sauce I knew it would make a great pizza sauce. Instant Pot Carnitas: The Easiest Pork Tacos

Now that we are in full on Fall mode, it’s time to break out the Instant Pot once again. It had been put away for most of the summer, but I expect it to be in rotation once again. I really love my Instant Pot and I’m so happy I purchased it back when it went on sale for Amazon Prime Day. These Instant Pot carnitas couldn’t be tastier or easier to make. If you plan it out, it could even be a weeknight dinner as it comes together in about an hour. Or, make it ahead of time and keep it in the freezer or fridge for a quick and delicious weeknight meal.

Curious about collagen, or what about gelatin? In this blog post I am sharing with you my favourite paleo chocolate pudding made with gelatin and coconut milk. As much as I love my chocolate chia avocado pudding, I wanted to create something a bit different. I tasted a very similar version of this pudding at one of my favourite healthy restaurants in Toronto and knew that I wanted to recreate this at home. I’m sure if you’ve been following along for a while, you know I don’t do labels, diets or follow any prescribed food rules. But for the purposes of this post, it was important to identify that these dreamy vegan and keto fat bombs are completely customizable to your needs and preferences. So if you are following a keto diet, you can still make these, just omit the few dates in the recipe and replace with a little more coconut oil. Or you can eliminate the nut part altogether and just make the coconut butter part. No matter what you choose, I promise you will LOVE these vegan and keto fat bombs.

DIY Raw Chocolate + Coconut Fat Bombs

DIY raw chocolateOk so I will admit it, I am not much of a romantic nor do I enjoy romantic comedies, flowers or expensive gifts for Valentine’s Day. Anyone else??? I find the idea that pulling out all the stops, going out of your way to get flowers or jewellery to show someone you love them kind of odd. I would much rather an intimate, homemade dinner and a nice bottle of wine. But I am never one to turn down chocolate thats for sure! So I have attempted to make raw chocolate in the past and it was good, but I always felt like something was missing with it. I really went all out and got as creative as I could with the mix-ins, add-in’s and spices. The result is this DIY chocolate and if you don’t like chocolate (the horror!) then you can try my coconut fat bombs, they are equally as delicious, provided you like coconut of course!
