Vegan Zucchini Fritters: Gluten Free

Zucchini season is one of my favourites, but if you have too many you can start to wonder what to do with them all. If that sounds like you, then hopefully these vegan zucchini fritters can help! I love how easy these are to make, and how tasty they are too. You can easily whip these up in one bowl, in under 45 minutes. I like adding some kick to them with a serrano pepper, but if you don’t want any spice, you can omit them. Cooling them off with a cool ranch dip is also highly, highly recommended.

Maple Roasted Carrots with Miso Dressing

I’ve been making these roasted carrots for a long time and I don’t plan on stopping. They’re sweet, sticky and savory. Every time I make them for someone, they love them just as much as I do. They sort of taste like candy. Not like candy, candy, but you know, delicious just the same. Even though carrots are already naturally sweet, I still like adding a drizzle of maple syrup to them. These maple roasted carrots have a savory miso dressing that helps to balance the flavours.

This cake! It reminds me of that McCain chocolate cake with frosting that I used to devour when I was younger. Except this version is a lot healthier and even has some zucchini in it. It’s a gluten free zucchini chocolate cake and I think you’re gonna love it. Because not only is the cake itself delicious and moist (sorry for using that word!), it also has a rich and SUPER EASY chocolate frosting. I’m talking just four ingredients here!

Nothing quite says spring and summer like lettuce wraps! And these shredded harissa chicken thighs are so perfect tucked inside. Although this is one of those recipes that are on the messier side (in terms of eating them), they’re well worth the mess. I’ve topped these crunchy wraps with beautiful additions like a spiced almond mix, all the fresh herbs and a simple sumac-lemon yogurt dressing. The flavours in this recipe will definitely make your tastebuds sing and your mouth very happy.

And you’d never even guess they have sweet potato in them. In fact I served them to someone without telling them and he had no idea. He was actually quite surprised.
