Most likely you’ve heard the saying, you are what you eat. Well, that may be partially true, but an even truer saying is – you are what you eat, eats. That saying is of course from the one and only Michael Pollan, a big proponent of eating natural foods. And while I advocate for a label-free way of eating and I indulge here and there in foods that may not be 100% natural, for the most part, I stick to a natural foods type of kitchen. And that includes buying organic, pastured or grass-fed meat. But do you need to buy organic meat and what is up with all the different labels on meat these days? What do they really mean? Instagram post 2197665756916140463_1635839696 Funny story to share- when I was growing up, my favourite food was chicken (usually legs). Weird, maybe?! But it really was. In fact when I was going through a bunch of old stuff years ago when I was moving, I found something I had drawn when I was in elementary school. We were supposed to draw our fav food, mine was chicken legs and mashed potatoes. Most kids probably would have had pizza, pasta or maybe even a sugary dessert, but not me 🙈.

Anyways, I really do love chicken. I think it’s one of the best things you can cook. The problem is most people overcook them or cook them wayyyy too high. Also, chicken breast is so underwhelming to me, give me that bone-in, skin-on goodness, thank you very much.
.
I cooked this using a different technique thanks to @alisoneroman book, dining in and I’ll never go back to cooking it any other way. This was slow roasted for two hours and it was worth every minute. A quick sear on my @lecreusetcanada cast iron after and I was in crispy chicken heaven. The 6 year-old Jaclyn and the 35 year old Jaclyn was thoroughly impressed 👌🏻. Also, there were potatoes present so it’s a win-win.

So when @covekombucha asked me to create a holiday mocktail, I was all like - yasss! #sponsored I love the health benefits of kombucha and mixing it with alcohol (or not, like I did with these mocktails) is such a genius idea. The fizziness of kombucha lends itself really well to a mocktail. And I love that this kombucha brand is certified organic, Canadian and just really tasty. Plus the story of how they started selling at the local farmers market in Nova Scotia and now are available all over Canada is super inspiring!

If you wanna try making your own mocktails, here is how I made them:
.
For both flavours: muddle 1 inch (thinly sliced) piece of ginger with 1 sprig rosemary and the juice of half a lemon. Transfer to two separate glasses.
.
Add a splash of pomegranate juice to one glass and add a splash of apple cider to the other. Top the pomegranate juice one with @covekombucha blueberry pomegranate kombucha. Top the apple cider one with @covekombucha raspberry lemonade. Give them a quick stir, and then strain and pour into a cocktail glass. Garnish with cranberries, rosemary, apple slices, berries and a cinnamon stick. Enjoy!

Of course, you can always add a splash of gin to these if you want 😉. Do you love kombucha too?
Instagram post 2195313631481383362_1635839696 I can still remember sitting in a stranger’s office, someone I had just met minutes prior for the first time and the words came tumbling out… “he cheated on me.” The next thing I knew, she was passing me some tissue and I was fighting to compose myself. The question she had asked was what brought me there today. It was my first time going to a therapist. Those four words became part of my story nearly one year ago and they changed everything.

That may sound dramatic, but its absolutely 100% true. I don’t think I have ever experienced a pain quite like I did this year. Infidelity effing sucks. Betrayal that feels so intensely personal messed with my confidence and trust. When in reality, infidelity has nothing to do with you and rather is a reflection of the individual who chose to lie, betray and cheat. And even knowing that now, the pain is still there, although not nearly as intense as it was 12 months ago.
.
This is exactly why I waited to share the truth about a breakup that almost broke me. I didn’t want to write something while still experiencing so much pain and anger. So I gave myself time. Time to process things, and time to heal. And now, it is time to share. Because it is after all MY story, MY truth and I want so badly to be open about the experiences and the hard shit. In truth, after finding out about the cheating, I felt so alone. And if me writing and sharing about what it feels like to be cheated on can help someone else feel less alone, then that’s all I care about.

If you wanna make these vegan and gluten free crepes, check out the recipe below and save it for later!

3/4 cup oat flour
1/4 cup tapioca flour
1 tsp baking powder
1 cup dairy free milk (almond or oat)
.
Add all ingredients to a blender and blend until combined. Heat a small skillet over medium heat and add some coconut oil. Add 1/4 cup crepe batter to the pan and swirl the pan to coat with the batter. Cook for 2-3 minutes, slide a spatula underneath and flip. Cook for 1-2 more minutes. Serve with @nutiva chocolate coconut butter inside, strawberries, coconut flakes, pomegranate, chopped @middaysquares bar and drizzle with melted chocolate 🍫. Enjoy 😍😍.

Instagram post 2179551065752867618_1635839696 Apple crisp in muffin form?! Yup 😍. These apple cinnamon muffins are now up on the blog and they are delicious 🤤. I played around with the recipe a few times to get them just how I wanted them and it was worth it. My freezer is now stocked with apple muffins but no complaints about that 😏. These babies are gluten free, and can easily be made paleo if you need.

Instagram post 2176472771423864407_1635839696 I’m back with another freezer friendly meal option and this time it’s in the form of tacos, your welcome 🌮. It’s true- I made these 30 minute @instantpotofficial pork carnitas and froze most of it for another day. Because I’m cooking for one, that means I have to be extra mindful of food waste and I like preparing things that can freeze well. For these, just take the leftovers out of the freezer the night before and let it defrost. Then crisp them in the oven on broil after. Easiest and most delicious tacos for any day of the week, yes please 👌🏻😍.

Just make sure to have all the toppings for your tacos to make weeknight tacos extra easy. I like adding some smashed avocado to the base and some extra veggies like 🌽🌶. Full recipe for these tacos is on my site, the link is in my bio ☺️.

The flavours are so balanced and delicious, plus the spices... yes please 👌🏻. So I simply had to create one of my fav Thai dishes - red curry coconut chicken. Because if I’m being honest, as much as I love Thai food and takeout, it doesn’t always love me back, digestively speaking. This creamy coconut Thai chicken curry is a little different bc I added lots of veggies to it (three different ones to be precise 🙈). I’ve got the full recipe up now and if you prep a few things ahead of time, this can come together pretty easily.

Not only are they super easy to whip up, but they freeze well too. You can serve them with a fried or poached egg on top if you want 👌🏻. Instagram post 2169316390656561555_1635839696 Have you jumped on the oat beverage bandwagon yet? [#Ad] I myself, am fully on board! Especially with the new @silk_canada Oat Yeah beverage. One of the reasons I have made the switch to oat is because of the taste and creaminess. Because for the most part, I use milk in my morning matcha and other lattes and I love when it gets frothy and creamy. And nothing gets it creamier or frothier than @silk_canada’s oat beverage (for real, I couldn’t believe it- check out my stories!). You can choose from three different and delicious flavours (plain, vanilla and chocolate). I used the vanilla in these pumpkin chocolate oatmeal bars and it worked like a dream. You can make them sweeter with a drizzle of chocolate on top (yes please!). I added the most flavourful toppings to make it super savoury and I haven’t been able to stop eating it, alongside some of those new @marysgonecrackers of course (if you know, you know!).

So what did I add to this hummus exactly? I made some of my own dukkah, which is an Egyptian nut and spice blend that is typically served with bread or fresh veggies. I’m telling you- if you’ve never tried it, you NEED to make some. It’s super easy to make and you will want to top everything with it after 🤤. I also fried some sage and added some pomegranate to it. And WOW is it ever good! I’ve got the full recipe for the hummus, the dukkah and all my tips to making the creamiest hummus up on my blog now. They’re soft in the middle with lots of melty chocolate chips and crunchy pecans and they go great with a glass of milk 🥛. I’m pretty sure they’re my new fave cookie recipe but that won’t stop me from thinking up new flavour combinations...

Instagram post 2159227052237302074_1635839696 It couldn’t be easier to make these @instantpotofficial pumpkin steel cut oats. I made a big batch of it to enjoy all week 🎃🎃. I love that I have steel cut oats ready in 20 minutes and I can easily re-heat them on the stove after. The creaminess from the pumpkin along with the spices makes this recipe perfect for fall. And to make it extra fun, I highly suggest adding some chocolate chips, pecans and any type of granola you have on hand. Thank me later when the chocolate chips melt in your oats ☺️👌🏻.

I don’t think there is another meal that is more comforting than pasta. Smother it with some kind of creamy sauce and seared scallops like this one and I am all 😍. I made the sauce dairy free by using cashews but you wouldn’t be able to tell one bit.

If you struggle with making scallops, I’ve got all the tips for making them perfect every time. They’re expensive af, so I get why most people are scared to cook them. It’s all about using the right equipment like a cast iron pan and not overcooking them. You can head to the link in my bio to find out how to make this creamy pasta with seared scallops. It would make the perfect fancy dinner night in.

And this month, I partnered with @mscbluefish to share more about finding and supporting sustainable seafood. When you choose fish products that are MSC certified that means you are supporting seafood that is wild, traceable and of course sustainable. So I always look for that little blue MSC checkmark ✔️. There are tons of sustainable seafood options available in the canned, fresh and frozen sections (and at the fish counter).

I chose to use some @mscbluefish smoked salmon to make a five minute smoked salmon dip. I even used some cashew cream cheese to keep it dairy free, although you can use regular cream cheese too.
