Description
These smashed radishes are tossed in a za’atar and parmesan coating and baked until crispy, perfect with Greek yogurt on the side.

- 3/4 lb (12 oz) radishes, sliced in half
- 2 tbsp extra virgin olive oil, plus extra for drizzling
- 2 tsps za'atar
- 1/2 tsp kosher salt
- 1/2 cup parmigiano reggiano (freshly grated, plus more for topping)
- 1 tbsp finely chopped parsley
- Greek yogurt, for dipping
Instructions
- Preheat the oven to 425ºF and place a baking sheet in the oven.
- Place the radishes in a bowl and toss with the oil, za’atar and salt.
- Remove the baking sheet and place the radishes cut side down. Transfer to the oven and bake for 20 minutes.
- Flip the radishes and bake for another 15 to 20 minutes, until tender.
- Use a fork to press down onto the radishes to smash them. Quite a bit of water will be released. Use paper towels to press down firmly and remove as much water as possible, it will be A LOT! Wipe down excess water on the baking sheet as well, or use a new baking sheet.
- Once all the radishes are done, sprinkle the parmesan over top and drizzle with a bit more olive oil and more za’atar if a lot of the seasoning came off. Transfer back to the oven and broil on high (500ºF) for five minutes, until browned and crispy.
- Sprinkle the radishes with parsley and extra parmesan. Serve with yogurt on the side for dipping. Enjoy!
