Description
An easy but flavourful shaved raw asparagus salad with feta, mint and pistachios.

- 1 bunch Asparagus washed and trimmed
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- Sea Salt to taste
- 1 bunch Mint fresh, chiffonade
- 1/4 cup Pistachios raw, unsalted
- 1/3 cup Feta crumbled
Instructions
- Using a vegetable peeler, peel the asparagus into thin strands and place in a large bowl.
- Whisk together the extra virgin olive oil, lemon juice and sea salt together and toss with the asparagus. Top with mint, pistachios and feta. Serve and enjoy!
