Whipped Brie with Strawberries
This whipped brie is impressively light and airy and comes together in under 30 minutes! Top with balsamic strawberries, fresh herbs and serve with crostini.

Ingredients
- 10 oz brie, triple cream recommended (refrigerated)
- 1 cup strawberries, tops removed (quartered)
- 2 tsp balsamic vinegar
- 1 tsp honey, plus extra for drizzling
- extra virgin olive oil, for drizzling
- fresh basil, for topping
Instructions
- Remove the rind from the brie and set aside (if using as a crispy topper). Cube the brie into large chunks.
- If using the brie rinds, preheat the oven to 400ºF and line a baking sheet with parchment paper. Transfer the rinds to the baking sheet and season with a little bit of freshly cracked pepper.
- Transfer to the oven and bake for 12 to 14 minutes, flipping halfway through, until just starting to brown and turn crispy. Set aside and then roughly chop.
- Meanwhile, add the strawberries to a small saucepan over medium-low heat. Add the balsamic and honey and cook, stirring often, until softened, about six to seven minutes. Remove from the heat and set aside.
- Add the brie to a food processor and process on high until completely smooth and airy, about eight to ten minutes.
- Dollop the brie on a platter or plate and use a spatula to smooth it out.
- Top with the strawberries, a drizzle of extra virgin olive oil and honey. Top with basil and a pinch of flaky salt. Serve with crostini and enjoy!
