Watermelon Burrata Salad
This refreshing watermelon burrata salad pairs crisp and cooling cucumbers and radish with jalapeño and a light basil dressing. Perfect for a hot summer day!

Ingredients
- 6 cups cubed watermelon
- 1/2 small watermelon radish, sliced thin
- 1/2 large cucumber, sliced thin
- 1/2 jalapeño, thinly sliced (or serrano)
- 1/4 cup extra virgin olive oil
- 1 1/2 tbsps white wine vinegar
- 3 tbsps finely chopped fresh basil, plus extra for garnish
- salt and pepper, to taste
- 8 oz ball burrata (room temperature)
- fresh mint, for garnish
Instructions
- Place the watermelon cubes on a large serving platter. Top with radish, cucumber and jalapeño.
- In a jar, or measuring cup, whisk together the oil, vinegar, chopped basil and salt and pepper.
- Transfer the burrata to the platter and gently break apart. Drizzle the dressing all over the salad.
- Garnish with fresh mint and extra basil. Serve and enjoy!
