Description
These healthy peanut butter and jelly bites are made with only five simple ingredients, and come together in 15 minutes.

- 1 cup freeze dried raspberries (or strawberries)
- 10 medjool dates, pitted
- 1 cup raw cashews
- 1 cup raw almonds
- 1/2 cup natural peanut butter, smooth
- 1 tsp kosher salt
Instructions
- Place the freeze dried strawberries (or raspberries) into a food processor and blend on high until a fine powder forms. Remove and set aside in a bowl. Wipe out the food processor with a paper towel.
- Add the dates, cashews and almonds to a food processor. Process until the mixture is crumbly and holds together when pressed between your fingers. This will take about two minutes of pulsing.
- Add the peanut butter and salt and process until everything is incorporated.
- Remove the mixture from the food processor and form into roughly 20 golf-ball sized balls. Roll the balls in the freeze dried powder and store in the fridge until ready to eat.
Notes
Keep leftover energy bites in the fridge or freezer if needed.
This recipe makes about 20-22 balls.
