Who else loves a good caesar salad?! I know I do. But usually the store bought versions are a little less than stellar when it comes to ingredients. That is why I love making my own dairy free version and slathering it all over some kale and romaine. This dairy free caesar salad has become my go-to for good reason, it is straight up delicious! Be warned, you’re going to want to slather this dairy free caesar salad dressing over alllllllll the salads.
As I sit here writing this blog post, I am sitting down to lunch in Liverpool (on vacation) and just had the most delicious meal. As much as I love going out for food, by the end of any vacation, I am usually ready to head home to the kitchen. I am one of those people that loves to cook, shocking, right? And I miss being able to pick out all of the ingredients and put together a meal. Especially being away during the summer months when fresh produce is abundant. But, I will not complain one bit, because I am on vacation. And in a few months from now, this will all be a distant memory.
Here was part of my lunch, a beet salad with goat cheese, hazelnuts and a few greens. I made this dairy free caesar salad dressing quite a bit when I was at home and served it to a guest and he loved it. He couldn’t believe that it was made dairy free with cashews. I always forget that so many people don’t know the magic of cashews. Once they are soaked and blended with water they turn superrrr creamy. When I think about the first time I did this, I remember I was blown away. Quickly, I became obsessed with this trick and wanted to turn cashews into everything creamy. Other fun additions to this salad include avocado, tomatoes and even crispy prosciutto. Or add some toasted nuts and seeds to it. If you do add toasted nuts and seeds, toss them afterwards with a little bit of extra virgin olive oil and nutritional yeast. This adds a great flavour that you are going to LOVE. Then just give them a rough chop and throw them on top of your salad. If you want to make this a full meal, add some protein to it, like grilled chicken or tempeh, or roasted chickpeas. Anything goes with this salad. With this one, I think you can show people how delicious whole foods can be. Anyone dealing with a dairy allergy can enjoy this creamy dressing over top of their salad. Another thing this dairy free caesar salad proves, is that maybe, just maybe, you can make friends with salad.

- 1/2 cup raw cashews, soaked for at least two hours
- 2 tbsp. hemp hearts (optional)
- 1/4 cup water
- 1-2 tbsp. extra virgin olive oil
- 1-2 tbsp. lemon juice
- 1 small garlic clove
- 1 tsp capers
- 1/2 tbsp. vegan worcestershire sauce
- 1-2 tbsp. nutritional yeast (optional- can add later to the salad itself)
- pinch of sea salt and pepper
- Soak cashews for a minimum of 2-3 hours in hot water, or overnight if you can.
- Add all of the above ingredients into a high powered blender and blend until smooth and creamy.
- Chop your kale and romaine.
- Add the dressing to the salad and mix to combine.
- Add additional toppings on as you wish.
