vegan green smoothie bowl:
I am not sure where I first saw the smoothie bowl or who the genius was that thought to transform a smoothie into a bowl, but I am sure happy they did! It’s always those unique little alterations and changes that can take the ordinary to the extraordinary. Little changes like these can make such a huge difference and it’s important to remember that especially when it comes to such things as our health.
I often hear of people making drastic changes to their diet or lifestyle (such as the new year resolution to hit the gym) and think to myself, why don’t you just try making a small change first and taking the time to adjust to your new life rather than the other way around? We tend to get caught up and intrigued by the latest food, health and wellness trends that we forget to check in and see if these changes actually are making us better or worse. Sure, hitting the gym 5-6 days a week sounds like a great idea and you may have all the intention in the world to meet your goals, but then something happens and it takes us off track. What do we do then? So many times, we let a minor or major setback deter us from our goals, but was that goal the right one for you from the beginning? I am a firm believer in taking the time to check in with myself when I set a goal and really think about how I am going to achieve it and also refining it to suit my own needs. I think this part is so often overlooked or maybe under appreciated and it’s so important to be true to our own selves rather than following the latest trend. Bottom line- Do what works for you!

I packed this one with a lot of goodness that will help to keep you energized throughout the day and feeling satisfied. I find with smoothie bowls, I take the time to really enjoy them more than I do when I am gulping them down at record speed!
Although the ingredients in this are a staple in my pantry, if you don’t have one of the ingredients, feel free to switch it up any way you choose.
Baobab powder, what is it? This seems to be the latest superfood that I see popping up all over the place and this one is for good reason! The powder comes from the pure, raw fruit of the baobab tree in Africa. It contains a high amount of Vitamin C, which is important for so many reasons, from supporting our immune system to helping build collagen. Baobab is actually considered one of the very best sources of vitamin C in the world along with camu camu and acerola. But guess what, that’s not all. Baobab also contains many other trace minerals such as calcium, copper, iron, magnesium, potassium, sodium and zinc! These trace minerals are actually super important for us to consume as many people tend to be more deficient in minerals than vitamins. Adding this antioxidant rich superfood into your daily rotation can definitely help to improve your health and I highly suggest adding it into your routine. You only need about 1 teaspoon to get all of the added benefits, so a little does go a long way.

- 2 big handfuls of spinach
- ½ cup to ¾ cup of water or coconut water
- 1 banana
- 1-2 tbsp. chia seeds
- 1-2 tbsp. hemp hearts
- 1 tsp baobab powder
- Unsweetened coconut flakes
- Raspberries (mine were frozen)
- Goji berries
- Chia seeds
- Add all smoothie ingredients into your blender and blend until completely smooth.
- Place your desired toppings on top.
- Enjoy with a spoon!
- I purchase hemp hearts, chia seeds and baobab powder from a health food store or some grocery stores (such as Whole Foods) will sell them as well in the bulk and dried goods section.
