There is something oddly satisfying about making a whole chicken, do you agree? I know many people think its gross to handle a whole chicken, but I really don’t know what the big deal is, where do you think those chicken breasts, wings, legs etc come from? I’d rather have my chicken pieces come from one chicken than several as is how it comes when you buy just one part. The other reason I like to make a whole chicken is because it is far more economical, and who doesn’t want to save a few bucks especially when that can go towards unnecessary green beauty products (because you know, I just don’t have enough of that yet…*sigh*).

Thai Red Curry Chicken With A Twist

Summer is officially over, which means cooler temps and of course more warming and comforting meals. It is really important that as the seasons change, so does what is on our plate and eating locally when possible is something I always try to do for myself and recommend to others. This not only helps to support our local farmers and all of their hard work, but it also tastes better and is better for the environment as well. Of course, with that being said, I definitely used ingredients in this dish that are not grown anywhere in Canada, but the spices provide the perfect amount of heat which is great when the temps start to dip. The Only Farro Salad You Will Ever Need

Being a holistic foodie, I have had my fair share of salads, both at restaurants and at home and I can honestly say that if I were to only ever have one salad for the rest of my life, it would be this farro salad! The dressing is kept super simple, but the addition of fresh herbs is what really makes this dish stand out. Shredded Chicken Burrito Bowl + Spicy Jalapeño Sauce

This shredded chicken burrito bowl is my favourite weeknight meal and here is why. What could be easier than making a burrito, but not having to actually stuff it and roll it and try to not have it explode everywhere?! Eliminate the middle man and put that shizz in a bowl! It may not be terribly difficult for some people to master the art of rolling the ingredients into a burrito, but every time I try, it looks like a hot mess. So rather than curse my inability to stuff a burrito or just curse in the kitchen (oh please I do that anyways), ditch the wrap entirely and make this shredded chicken burrito bowl instead.

St. Patty’s Day holds a special place in my heart, so I wanted to create a recipe that would mirror that feeling. Way back in my university days, on one St. Patty’s Day, I would meet a very special person (a boy) that would forever change my life. I didn’t know it back then how special this night would be, but it was definitely life changing in the best way possible. So, yes, I am that girl that met her boyfriend at a bar, and 12 years later, things are better than ever. I can honestly say that as crazy as he can drive me sometimes, I cannot imagine my life without him and I don’t even know how this website would be up and running without his knowledge and expertise in all things technical. Dairy Free Butternut Squash Soup (Thai inspired)

Dairy Free Butternut squash soup was new to me!

Butternut squash has got to be one of my favourite squashes, I love roasting it and having it in tacos, making mac and cheese sauce with it, but interestingly enough I never used it to make soup. Until one day, I had my butternut squash just sitting there waiting to be eaten and the thought came to me to try something different and make a soup out of it. I know, this is not a breakthrough concept by any means, but it was a good reminder for me to try mixing things up a bit more, plus I adore soup. I knew that I wanted to have a dairy free butternut squash soup that was Thai inspired, so coconut milk was a must along with cilantro and everything else that just kind of came to me as I was cooking, it’s so awesome when that happens!

The BEST Veggie Burger

That’s a pretty bold statement I know. But with this one, I can back it up. You see I have quite a love affair with veggie burgers and over the years I have had some good ones and I have definitely had some bad ones. You may not know this about me, but for about five years I was a strict vegetarian and then vegan so I have had my share of good and bad veggie burgers. I would always prepare myself for the onslaught of comments with some of my friends about my choice in choosing a plant based diet or the look of disgust when I whipped out a veggie burger at a BBQ. I must admit I am completely obsessed with my spiralizer especially in the summer when the last thing on my mind is turning on the stove to boil some water. Every once and a while a meal comes along that completely knocks my socks off and for me this was one of them. Like so many people out there, I am a complete sucker for tacos. It combines the best of so many worlds, avocados, fresh raw veggies, the right kinds of spices and it should be light and satisfying. These are really versatile so feel free to play around with the spices, protein or veggies you have on hand. Just make them- trust me!
