I have been enjoying this breakfast for a couple of weeks and I cannot stop eating it, overnight oats anonymous right here! This can be yours in the morning if you take 5-10 minutes to prep this the night before. Not going to lie, I am a little sad that summer is ending soon, but that does mean we are moving into fall here in Ontario and that is one of my favourite seasons, yes bring on all things pumpkin and squash!
Is Breakfast Really The Most Important Meal of the Day?
Growing up, I can always remember hearing my mom talk about how important breakfast was and she would get so worked up about how my dad would skip breakfast (and often times lunch) while he was working. He would then just binge on dinner when he got home, so she started getting him some granola bars to have while he was driving into work, which is better than nothing I suppose?!
But is that old saying really true? Is breakfast the most important meal of the day?
Putting ANY food into your body really is one of the most important things you can do for your health both in the short and long term, so why focus solely on breakfast? Well, for one thing breakfast is just that- breaking the fast from the time you went to sleep until you woke up, your body hasn’t had any food so it is important to refuel yourself once you awake. Whether that is right away when you wake up or a few hours later, the important thing here is to listen to your body. Ask yourself, “Am I really hungry?” and then decide if you want to have breakfast or not. Personally, upon waking, the first thing I do is have my glass of lemon water (I prepare it the night before and set it on my kitchen counter) so that it is ready for me in the morning. As someone who travels to work in the morning, I know how important every minute is when trying to rush out the door. This is also why I rely on quick things (like this quick healthy vegan breakfast) that are prepared the night before so I can grab it and go.
Mornings are rough – I feel you!
Although this doesn’t sound very holistic nutritionist like: by rushing out the door, not taking time to do yoga in my condo or waking up at 5am to prepare a healthy breakfast. This is me, this is real life and this is what works for me. I also happen to believe this is what works for a good majority of the working class population, so this is why I am sharing this with you. Mornings are hectic, so why stress about adding in another thing to do before the day even gets started? That is why I love making quick breakfasts the night before and then by the time I get to work I can enjoy it rather than eating on the go or grabbing take-out.
I do very much believe in being present when you eat any meal. So eating and walking to work or on the subway or scarfing down your to-go meal before heading into your meeting also is not ideal. When you sit down to enjoy your meal, you eat first with your eyes, then digestion begins in your mouth. That’s right, chewing your food rather than just inhaling it and swallowing can often times cause indigestion later on. So do yourself a favour and sit down, enjoy every bite, CHEW, enjoy and swallow. This can make a huge difference in your life and for your digestion.
Quick Healthy Vegan Breakfast
So feel free to whip this up and enjoy this quick healthy vegan breakfast! I love adding hazelnut butter to it and a pinch of cinnamon, but feel free to use any nut butter you have on hand. Hope you enjoy this overnight oat combo as much as I have been lately.
- 1/2 cup rolled oats (use gluten free if you need)
- 3-4 tbsp. chia seeds
- 1 cup dairy free milk + more if you need the next day if you like (I use homemade hemp milk)
- 2 peaches, chopped or sliced (leaving the skin on)
- Pinch of cinnamon
- Drizzle of nut butter (I like hazelnut and almond best)
- 1-2 tbsp. crushed walnuts or cacao nibs
- In two mason jars or containers, put all the ingredients together and stir well.
- I start with the oats and chia seeds first and stir that up. Then I add the rest of the ingredients and shake it up.
- Place it in your fridge overnight and enjoy the next day with a splash of milk or water if needed.
