Vegan Zucchini Fritters: Gluten Free

Ingredients
- 3 cups zucchini shredded and then measured, about 2 medium sized zucchini
- 2 tbsp flax seeds ground
- 2 tbsp lemon juice
- 1/4 red onion large, sliced thin
- 1/4 cup parsley chopped
- 2 garlic cloves minced
- 1 serrano pepper seeded, chopped
- 1 tsp baking powder
- 1 tsp kosher salt
- 3/4 cup chickpea flour
Instructions
- Using a box grater, shred the zucchini. Using a nut milk bag or clean dish towel, strain the zucchini very well until most of the water is removed. Add to a large bowl.
- In the same bowl, add all of the remaining ingredients from the ground flax to the flour. Mix to combine.
- Heat a skillet over medium heat, add some avocado oil (or ghee). Once hot, scoop about 1/3 cup of the zucchini fritters mix and flatten slightly with your hands. Place on the pan and press down with the back of a spatula. Cook for 4 to 5 minutes, until browned, then flip and cook for 4 minutes longer, until crispy.
- Remove the fritters and place on a plate. Continue cooking until all the fritters are cooked. Serve with dip and enjoy!
